Recipe of the Week- 6/29/16


If you do not have a veggie spiralizer, you must put this on your shopping list. This recipe is a great alternative for all of you pasta lovers like myself!

Prep time: 5 minutes

Cook time: 15 minutes

Yields: 4 servings

Ingredients:

1) 1 medium sized zucchini

2) 1 medium sized summer squash

3) 1 medium sized sweet potato

4) 2 TBSP olive oil

5) 1 pint of grape tomatoes diced

6) 1 pound of ground turkey

7) 1 large onion (diced)

8) 1 garlic clove (minced)

9) Salt, pepper, parmesan cheese to taste

Instructions:

  1. Cook the ground turkey in a skillet over medium heat and cook until brown.

  2. While the ground turkey is cooking, use a veggie spiralizer ( I used the attachment to the kitchen aid) and spiralize the zucchini, yellow squash, and sweet potato.

  3. Heat the olive oil over medium heat in a skillet and add zucchini, yellow squash, sweet potato noodles, onion, minced garlic, and diced tomatoes to the pan. Cook until the noodles are soft. (5-10 minutes)

  4. Remove noodles from heat and toss with the ground turkey. Mix well.

  5. Add spices of your choice.
