Ingredients:
1 tablespoon olive oil
1 lb organic ground turkey
1 cup marinara sauce ( I prefer Rao's brand or homemade)
1 1/2 cups ricotta cheese
24 2-inch won ton wrapper or 12 whole wheat lasagna strips ( cooked)
1 1/2 cups shredded mozzarella cheese
2 tablespoons chopped fresh parsley leaves
Instructions using wontons:
1) Preheat oven to 375 degrees.
2) Spray a 12-cup muffin tin with nonstick spray.
3) While the oven is preheating, add the 1 tbsp olive oil to a medium sized pan on the stove.
4) Cook the ground turkey on the stove over medium heat until browned.
5) Once it is cooked, add the marinara sauce to the ground turkey and mix well.
6) Place wonton wrappers into each of the muffin tins. (press carefully to make sure there is an opening in the center).
7) Fill each cup with 1 tablespoon ricotta cheese. Then add 1 tablespoon of ground turkey mixture and 1 tablespoon mozzarella cheese; repeat with one more layer.
8) Place inoven and bake for 10-12 minutes, or until the cheese has melted and the wonton wrappers are golden brown.
9) Garnish with parsley and serve!
Instructions using whole wheat lasagna:
1) Preheat oven to 375 degrees.
2) Cook lasagna noodles according to package directions; drain and lay noodles on a large baking sheet lightly coated with olive oil; set aside.
2) Spray a 12-cup muffin tin with nonstick spray.
3) While the oven is preheating, add the 1 tbsp olive oil to a medium sized pan on the stove.
4) Cook the ground turkey on the stove over medium heat until browned.
5) Once it is cooked, add the marinara sauce to the ground turkey and mix well.
6) Cut each lasagna noodle in half. Lay one half of a noodle into the bottom of each oiled muffin cup.
7) Fill each cup with 1 tablespoon ricotta cheese. Then add 1 tablespoon of ground turkey mixture and 1 tablespoon mozzarella cheese; repeat with one more layer.
8) Place inoven and bake for 10-12 minutes, or until the cheese has melted and the wonton wrappers are golden brown.
9) Garnish with parsley and serve!
